Day Six...

So today was a bit of a homebody day.
Since I stayed out so late from girls night I was uber exhausted and didn't wake up till 9:30. I went to church the night before so I didn't feel much like moving my lazy bum in gear to go to Sunday school this morning. I had a nice day of cleaning my apartment and kitchen of the mess I made yesterday as well as during the past week, did dishes and laundry and watched a couple movies and started reading a new book. I also made lunches for the rest of the week. Overall, I had a very productive day. I also just got back from a 6-7 mile run. I've yet to mapmyrun it, so I am not entirely sure how long it was.

Today I ate:
Breakfast: Greek scramble (turkey, spinach, feta cheese and 2egg whites with one whole egg.
Snack: Banana with peanut butter
Lunch: Salad with italian dressing
Snack: Another Banana with peanut butter (my last banana looked like it was about to go bad so I just finished them off today.)
Dinner: Salad, feta cheese, and sunflower seeds with raspberry dressing

Today I read Genesis 6:
I seemed to get stuck more in the earlier passages today. Hearing this story a lot growing up you start to feel like you know it backwards and forwards, but what I sometimes forget is the number of people that must have been on the Earth at this time. Somewhere around 6 billion people of all ages from 800years old to 1day old. Crazy! Who would have thought so many people would produce so quickly. In Gen 6:3 God says, " My Spirit will not contend with man forever, for he is mortal, his days will be a hundred and twenty years." - The Lord seems to show his justness here. Though he would love for man to live in peace and remain forever, he could see the sin and that men had only evil in their hearts. v.6 "The Lord was grieved that he had made man on the Earth and his hear was filled with pain." This seems to be the turning point for the Lord, when he looked upon his creation and all he saw in the hearts of man was wickedness and evil all the time. I can't speak for God but I know how sad I get when I see other people do mean things to others and I know I am guilty of it sometimes. I cannot even fathom God's pain for he sees is a billion times over. He looks over all he had created and the only righteousness he could find in all the Earth was Noah and his family. What a depressing sight the world must have been. Probably a lot like it is now. Well, though a flood is not coming I can see the signs of the birth pains starting. All the Earthquakes, tornadoes, hurricanes and other natural disasters. It is a wonder sometimes that the rapture doesn't happen now..... Dear Lord, help me to be a witness and a light in this world that you may use me to bring people to you. In your name I pray, Amen.

God Bless you and Good Night!

Mediterranean Chicken Dinner

What you need:
1 Tbs olive oil
1/2 tsp of salt
1/4 tsp of pepper
8-10 skinless chicken thighs with bone in ( I actually used about 5-6 boneless chicken breast cutlets- still worked really well)
1/4 c. white wine vinegar
2 cloves of garlic sliced into thin rounds. (Truthfully I didn't know how to make this happen so I just chopped them up and sprinkled them on top... still tasted great)
3-4 sprigs of fresh thyme (I just sprinkled thyme on them from my spice rack.)
1/2 c. pitted olives ( I used Kalamata Olives)
1 lemon, sliced in thin rounds
1 c. whole wheat couscous ( I just used a box and then added a little Italian seasoning to it)
1/2lb of fresh asparagus
1 tsp of lemon zest.

To make:
  1. Preheat oven to 450 degrees
  2. Heat olive oil in a large oven proof skillet, over medium heat. Sprinkle chicken with salt and pepper, add to pan, cook 5 min, turn and cook 2 min.
  3. Pour out any excess fat, return pan to burner, stir in broth and white wine vinegar. ( I was unsure if I skilled was oven proof so I just put my chicken and broth into an oven proof pan once I had finished with the skillet) Then I sprinkled the garlic, thyme, and olives on chicken and lay one lemon round upon each piece of chicken.
  1. Put skillet (pan) in oven and Roast chicken for 17-20 min
  2. Prepare couscous as described on box (add Italian seasoning if you love to season)
  3. Steam Asparagus until crisp and tended then sprinkle with lemon zest.
  1. Serve chicken over couscous with steamed asparagus on the side.
  2. EAT and ENJOY!

Day Five.... elaborated.

It was a bit difficult to go running this morning as I stayed up late the previous night reading my Book, which I finished today! So I did not go running and I was not as faithful on my diet. :(

What Did I eat
Breakfast: 2 egg whites scrambled with 1 whole egg, spinach, turkey and feta cheese added after it is scrambled.
Snack: Banana with some peanut butter
Lunch: Salad (romaine lettuce with spinach) with cucumbers, carrots, a turkey burger and drizzled with a raspberry vinagrette... Delish!
Snack: turkey with some steamed asparagus I was cooking for dinner.
Dinner: Mediterranean Chicken with Couscous and steamed asparagus. (recipe to come)
After Dinner snack: 3 peanut butter cookies and half a cupcake (A tasty treat that probably should not have been eaten :( ....)

Overall, a good day of sleeping in relaxing and reading. I went to church that evening and then to a girls night over at my friends house, we watched How to Marry a Millionaire. It was hilarious and many laughs were shared through out the evening.

I did read Genesis 5 in the morning....
I will admit when I was younger it was not quite the favorite that it is now. All it is, is an account of the lineage from Adam to Noah. However, the cool part is that God totally reveals himself and his plan through out the names of the men in the lineage! Love that!!!
Adam=Man
Seth= appointed
Enosh= mortal
Kenan= sorrowful death
Mahalalel= from the presence of God
Jared=one coming down
Enoch=dedicated
(side note... Enoch never dies.... He walks with God and is no more. Perhaps this is how the rapture will occur... Food for thought. I would love if I ever get any ink in regards to my name it would say something like "She walked with God." How cool would that be!)
Methuselah= Dying he shall send
Lamech=to the poor to be destroyed
Noah= rest and comfort
When you put it all together you get Man appointed mortal sorrowful death from the presence of God one coming down dedicated dying he shall send to the poor to be destroyed rest and comfort.-

It may not read perfectly like a sentence. However, the message is there that a man (Jesus Christ) would be appointed to be mortal (for he was a God) a sorrowful death he would have, sent by God to come down to Earth dedicated (predestined) to die for the poor, and in his dying he would send (give) the poor (the sinners) rest and comfort.

I personally think this passage is beautiful that the Lord is so into the small things that he would name the first few people of the Bible with names that would tell of how they would be delivered. If you add all of the ages together only 1056 years after the fall of man is the way they shall be delivered revealed to them for a second time. The first time it is stated in Genesis 3:15, immediately after the fall of man. I think that maybe Eve thought Seth would be their deliver for in Genesis 4:25, she names him appointed. Oh if she only knew the great plan that God was already unfolding for all of mankind.
